Sant Mateu d'Albarca, enjoy the color of the vineyards in autumn

October 07 2026

When the summer hustle and bustle dissipates and the Mediterranean sun softens its intensity, the interior of Ibiza unveils one of its most stunning and unknown pictures. In the northwest of the island, framed within the municipality of Sant Antoni de Portmany, the picturesque village of Sant Mateu d'Albarca and its fertile plain transform during the autumn months into a haven of peace, color, and tradition. It is the time when the red soil contrasts with the golden vines, the pine forests smell of damp earth, and the countryside recovers its ancestral rhythm.

Exploring the Pla de Sant Mateu between October and November means entering the most authentic Ibiza. The wine culture, the paths between dizzying cliffs, and traditional comfort food designed for cool days turn this rural corner into an essential destination for those seeking to discover the island's magic in this 2026.

The autumn landscape: a canvas of warm tones and rural peace in Sant Mateu d'Albarca

The Pla de Sant Mateu is a wide agricultural depression that has managed to remain virtually unchanged despite urban tourism development. Visiting this valley during the autumn season provides a unique sensory experience shaped by nature and the hand of the Ibizan farmer:

The chromatic metamorphosis of the vines

After the late summer harvest, the hectares of vineyards blanketing the valley begin a spectacular transformation. Towards October and November, the green foliage of the vines gradually turns into a range of intense yellows, ochres, coppers, and vermilions. This explosion of color contrasts strongly with the singular terra rossa (the red clay so characteristic of Ibizan agricultural soil) and the perennial green of the surrounding hills.

A valley protected by cliffs

The plain is sheltered by limestone elevations and dense pine forests that cushion the winds. However, just a few kilometers to the north, this rural serenity breaks drastically upon meeting the coast, where the plateau drops precipitously into the Mediterranean in the form of dizzying cliffs of white and gray limestone.

Traditional architecture and old-time atmosphere

The small urban core of Sant Mateu gravitates around its parish church, built at the end of the 18th century. It is a canonical exponent of peasant defensive and religious architecture: whitewashed walls of immaculate white, thick walls, and a characteristic arched porch (porxet). Around it, a couple of traditional bars and scattered houses form a setting where time seems to have stopped.

Ibiza's winemaking tradition and its signature wines

The art of cultivating vines in the Pla de Sant Mateu is not a recent phenomenon. Viticulture arrived on the island with the Phoenicians in the 8th century BC and was consolidated during Punic and Roman times, establishing an agricultural vocation that has endured uninterruptedly for millennia.

Historical country wine (vino payés)

For centuries, wine production in Ibiza was linked to the self-sufficiency of country houses (casas payesas). Each family cultivated their small vineyard plots and crafted their own country wine in domestic cellars using artisanal methods passed down from generation to generation. This wine, with a robust body and character, remains a symbol of hospitality at local tables.

The geographical indication Vi de la Terra Eivissa

In recent decades, the wine sector of Sant Mateu has undergone a qualitative revolution, combining traditional knowledge with advanced winemaking technology to give rise to the geographical indication Vi de la Terra Eivissa. The wines produced in this area stand out for their marked Mediterranean character, influenced by the salty breeze, high sunshine hours, and the minerals of the calcareous-clay soil.

The grape varieties of the valley

  • Red grapes: the absolute queen is Monastrell, an indigenous late-ripening variety that provides structure, aromas of ripe black fruits, and balsamic notes. It is complemented by Syrah, Tempranillo, Garnacha, and Merlot vines, which bring roundness, color, and aromatic complexity to the blends.

  • White grapes: Malvasía (or Malvasía de Canyamel) is the white variety par excellence, famous for its freshness, elegance, and floral and citrus aromas. Muscat of Alexandria is also grown, and work is underway to recover historical varieties such as the Beba grape.

The Wine Festival (Festa del Vi)

Every September 21st, the feast day of Saint Matthew the Apostle, the village celebrates its Patronal Festivities. However, it is in late autumn when the village hosts its famous Festa del Vi, a popular event where the valley's winemakers present the first tastings of the new year's wine, accompanied by grilled sobrasada, botifarra, and traditional dances (ball pagès).

Wineries of Sant Mateu d'Albarca to organize an unforgettable tasting

The valley of Sant Mateu concentrates the highest density of bottling wineries on the island, becoming the star destination for wine tourism in Ibiza. Two houses stand out for their trajectory and the excellence of their facilities. Discover the best wineries Ibiza has to offer!

1.    Bodega Sa Cova (Ojo de Ibiza)

Founded in 1990 by the Ibizan visionary Joan Bonet, Sa Cova holds the historic title of being the pioneer winery in marketing and bottling wine with a quality seal in Ibiza. What began as an experimental winery to perfect the family wine ended up transforming into a benchmark company that consolidated 10 hectares of its own vineyards (spread among Monastrell, Syrah, Tempranillo, Merlot, Malvasía, and Muscat). Years later, the winery gave way to the Ojo de Ibiza winemaking project, while keeping intact the respect for the local terroir and the quality of its wines.

The estate has a winemaking capacity of up to 60,000 liters and features a park of French and American oak barrels. Its facilities produce some of the most awarded labels in the Balearics:

  • Sa Cova Blanc de Blancs: a young, fresh, and highly aromatic white, crafted with 90% Malvasía and 10% Muscat. Ideal to pair with grilled fish and seafood.

  • Sa Cova Rosado: Monastrell rosé of a beautiful salmon color, perfect to accompany dry rice dishes and pasta.

  • Sa Cova 9: a young 100% Monastrell red, flavorful and fruity, suitable for local oily fish or poultry meats.

  • Sa Cova Privat: the flagship aged red wine of the house, made from a selection of the best Monastrell (60%) and Syrah (40%) grapes, aged for 12 months in barrel.

  • Clot d'Albarca: an intense red composed of 60% Syrah and 40% Monastrell, with a long maceration of 40 days and one year of aging in French oak.

In addition, within the winery grounds operates the restaurant Celler Sa Cova, a gastronomic space where young chefs trained in culinary temples like El Bulli or El Celler de Can Roca offer local signature cuisine paired with estate wines.

2.    Bodega Can Maymó

Founded in 1995 by Antonio Costa, Can Maymó is the paradigm of the family-run Ibizan winery where love for the land is transmitted in every bottle. Located in a spot of serene beauty, its vineyards benefit from the valley's protected microclimate and proximity to the sea.

Can Maymó has stood out for its work in recovering indigenous Monastrell and Malvasía varieties, combining them with Merlot, Cabernet Sauvignon, and Syrah vines. Its wines are characterized by a markedly Mediterranean personality, with notes of wild aromatic herbs (rosemary, thyme) and forest fruits. The winery offers guided tours under prior reservation that include a walk among the vines, technical explanation of the production process in the tank and barrel room, and a guided tasting of its red, white, and rose wines paired with local cured meats and country bread (pa payés) with local olive oil.

Hiking routes in Sant Mateu d'Albarca and its cliffs

Mild autumn temperatures turn Sant Mateu into the ideal starting point to put on your hiking boots and explore hiking routes in Ibiza that combine rural calm with seaside cliff views:

1.    Flat walk through Es Pla de Sant Mateu (low difficulty)

A circular route of low difficulty running along the dirt paths that structure the agricultural plain. The itinerary flanks vineyards undergoing full color metamorphosis, almond trees, fig trees, and centennial carob trees. It is an ideal walk for families and photography enthusiasts seeking to capture the golden afternoon light over the red-dirt fields.

2.    Excursion to the archaeological site of Ses Torres d'en Lluc (medium difficulty)

An itinerary of immense archaeological and landscape value. Starting from the village towards the north coast, the trail crosses dense pine forests until reaching a promontory over the sea where remains of an enigmatic fortification are preserved. The complex consists of two circular towers and a wall section from the late Roman or Punic period. The panoramic views over the deserted cliffs are breathtaking.

3.    Wild descent to Cala Albarca / Cala d'Albarca (medium-high difficulty)

One of the most spectacular excursions in Ibiza. The trail enters a narrow ravine descending towards an untouched bay flanked by rock walls over 200 meters high. Along this stretch of coast, it is possible to admire the famous natural stone bridge, an impressive rock arch carved over the sea by wind and water erosion. The route requires mountain sports footwear with good grip and suitable physical fitness to tackle the return slope.

Autumn gastronomy: traditional flavors for cool days

After a walk along the cliffs or a wine tasting at a winery, inland Ibizan gastronomy comes as the comforting climax to the day. Rustic restaurants in the valley and neighboring villages offer dining rooms with fireplaces to savor centennial recipes. Explore these must-try traditional Ibizan dishes!

Stews and traditional comfort dishes

Autumn is the perfect season to taste authentic sofrit pagès, a traditional stew made with free-range chicken, lamb, sobrasada, botifarra, and local potatoes sautéed with garlic and parsley. Another essential specialty is arròs de matances, a soupy rice prepared with pork meats, aromatic spices, and esclatasangs (wild mushrooms harvested in pine forests after early rains).

Fish and seafood rice dishes

For those who prefer sea flavors, classic bullit de peix offers boiled rock fish with potatoes and a mild aioli, followed by a mellow arròs a banda.

Native desserts and liqueurs

The sweet finishing touch comes from flaó, a traditional mint-infused cheesecake made with fresh goat and sheep milk cheese. The meal concludes with a glass of hierbas ibicencas (aniseed digestive liqueur macerated with native plants) or a café caleta (flamed coffee with rum, brandy, cinnamon, and citrus peels).
