Beyond the sparkly restaurants, the sheer variety of gastronomic delicacies to try in Ibiza is immeasurable, but a few key names have come to make Ibiza memorable for its haute cuisine as well.
How does a restaurant in Ibiza qualify for a Michelin Star?

La Gaia: A Michelin Star fusion restaurant in Ibiza

Described by the experts as Mediterranean fusion with a touch of Japan and Peru, La Gaia sits in the city of Ibiza, on Passeig Joan Carles I but is even hidden from Google street view because it is in fact within the Ibiza Gran Hotel, making it elusive as well as elegant. Chef Óscar Molina leads what he describes as Mediterranean-kaiseki cuisine.
In its kitchen, the oldest traditions of Mediterranean cuisine fuse with evident influences from the cuisines of Peru and even Japan. It seems that this Gaia kitchen exists to create, innovate, and dream up new high-flying gastronomic experiences.
La Gaia offers diners two tasting menus: Tanit (10 courses) and Posidonia (14 courses):

The Tanit menu includes delicious dishes such as ramen broth, oyster tempura, sea bass ceviche, green pea stew, and grilled blue lobster.
On the Posidonia menu, truly luxurious dishes include fermented roasted beans, pickled tomato, lobster croquettes, sole and caviar, Norway lobster, rooster, citrus dorayaki and the passion fruit cloud

Es Tragón: A Michelin Star and historic restaurant in Ibiza

In San Antonio, there is something that contrasts with the clubbing empire that also resides here: The chef Álvaro Sanz and his creation, Es Tragón, takes visitors on a journey through the history of the civilizations that at some point set foot on the island.
Sanz’ Michelin Star is based on his courageous and determined commitment to always level up, leading him to collaborate with historians, biologists, and agriculture to delight all the senses. The team at Es Tragón are gastronomy artisans, weaving traditional tastes with avant-garde flavours, primarily employing stews and long cooking.
The restaurant is unique in its self-sufficiency, thus controlling the full supply chain. Es Tragón’s team salts its own meats, ferments cheeses, and bakes its own bread, maintaining contact with nature as much as possible. Intrigued, or salivating?
The Erizo menu (21 courses) and the Payés (13 courses) are the highlights on the menu:

On the Erizo menu, dishes such as cuttlefish and seaweed, suckling pig, root vegetables and the Ibiza fish stew with rice are part of a tasting menu.
If you choose the Payés menu you’ll savour delicious desserts made with rose, hibiscus, and cherry, different sourdough breads – xeixa, saline focaccia or seeded.

Etxeko Ibiza: A Michelin Star inventive restaurant in Ibiza

Berasategui conquered the island of Ibiza and Michelin star-seeker’s hearts in Es Canar. The Etxeko restaurant is run by chef Paco Budia, faithfully replicating the flavours of his childhood in the Biscay Bay.

Here, you can choose gourmet dishes à la carte or through an exquisite tasting menu that is a true tribute to the chef’s roots: the tasting menu consists of eleven courses and includes classics from San Sebastián, such as the liquid ham omelette, the truffle with fermented mushrooms and cabbage, and the Lasarte salad.

The price for this menu is at €255 at the time of publishing, but there is also a shorter tasting menu of only 6 courses for €175 per person. Come and delight in the real show, flavours, and skills of an Ibiza Michelin Star restaurant.
