For centuries, Ibizans have been weaving a cosmopolitan society with deep-rooted traditions, which can be perceived perfectly in the elaborate and exquisite Ibizan desserts. The recipes, ingredients and methods of preparation have been passed down from generation to generation and today we can all enjoy the history in pudding form!

Flaó: Not flan – a delicious cheesecake

Although its origins date back to peasants of the Middle Ages, the flaó recipe has been conserved to this day in its entirety. Flaó is a cheesecake that’s traditionally made in different ways – the recipe varies depending on the region.

The recipe usually includes goat or sheep cheese, eggs, aromatic herbs, and sometimes puff pastry. The mixture is baked in a round mould and served cold.
This typical Ibizan dessert is dense and tasty and can have hints of peppermint, mint, or cinnamon flavours. While it is a popular pudding to serve at parties on the island it is also said to be a traditional Easter food.

The tradition and flavour combine with special aromas to make this unmissable typical Ibizan dessert, try the flaó at Bar Anita if you’re in the Santa Eulalia area.

Greixonera: a take on bread and butter pudding

The greixonera is one of the typical Ibizan desserts par excellence made with bread, milk, eggs, sugar and cinnamon. The ingredients are baked in a rectangular mould and served cold. It is a simple dessert that is usually served with vanilla ice cream or whipped cream.

It is a refreshing but filling typical Ibizan dessert, it’s nutritious and easy to make since all its ingredients are easily found in the average kitchen and don’t cost a fortune to make. That said, we recommend going to Es Rebost de Can Prats to try theirs.

To the standard list of ingredients, some people prefer to replace the bread with day-old ensaimadas, a locally made pastry, because that way, they have marinated in the flavours. Sometimes simple stale bread is used, but don’t let that put you off, Ibizan grannys swear by it!

Magdalenas labradoras: symbolic sweets

You’ll be pleased to know that Ibizan madeleines do not involve labradors! One of the most popular Ibizan desserts. These appetising almond cakes are not dissimilar to Bakewell tarts that Brits all know and love, and have been eating since we were children.

They are usually oval-shaped, have a handmade puff pastry base and are filled with almond paste. Then, these madeleines are baked and sugar is powdered on top.
This sweet treat is perfect for any time of day, but more appetising in winter. Other ingredients include a teaspoon of cinnamon powder, the zest of half a lemon, sugar, and icing sugar. You won’t be able to stop at just one of these typical Ibizan desserts!

Orelletes: sweet and crunchy pastries

Orelletes are thin and crunchy pastries made with flour, egg, olive oil, salt, lemon zest, baking powder, anise, and sugar. The dough is rolled out thin, cut into a triangle shape, and then deep-fried in hot oil. They are usually served with a sprinkle of sugar and cinnamon and make some of the most popular Ibizan desserts at parties and celebrations on the island.

What makes orelletes interesting is that, although it is typical of different areas of Catalonia, it is also a traditional sweet dish of the Balearic Islands and the Valencian Community, though they are prepared differently.

If you hadn’t guessed, they are called “ears” in Spanish because that is what they resemble. Tuck into some crunchy orelletes with your morning coffee or evening tea! You can find them in many bakeries but one restaurant that has them on the menu is Restaurante Can Pineda.

Almond gató: a cake fit for kings

The gató is a typical Ibizan dessert that is made with almonds, eggs, sugar and lemon. The mixture is baked in a round mould and served cold, cut into portions.
The almond gató is a soft and sweet cake, with a delicate texture and aromatic flavour. It is usually served with a scoop of vanilla ice cream.
We even have the recipe! For 8 people, you need 6 eggs, yolks and whites separated, 200 grams of sugar, 200 grams of ground almonds and some lemon zest. Dust some sugar icing on top for a touch of decadence!
